Recipes

My sisters Edith and Vicky have asked for some Vegan recipes and I'm kind of embarassed because they are way fancier cooks than me. I'm kind of like my Dad in that I'd be happy with a plain baked potato and salsa as long as I knew it fit the diet. So flavor is not hugely important to me. Nevertheless I'll pass on a couple of recipes, maybe they'll like them too.

The first is from Jane Brody's cookbook:

Homemade Hummus (Way better than Store-bought)
Sauté in 1 T. olive oil till soft and partially brown:
1 medium chopped onion,
1 T. minced garlic
Puree in food processor:
The onion mixture
Juice of 1 lemon
1/3 c. tahini paste (sesame seed butter find in health food section)
1 T. soy sauce
1 can garbanzo beans rinsed and drained.
To your preference you can add: water 1 T. at a time, and salt (if you use regular soy sauce you should not need it).
You can also add to the mix: sundried tomatoes, roasted red bell peppers, artichokes, fresh rosemary… Be creative.
Hummus is a very healthy snack. When eaten with bread or chips it is a complete protein, and it contains only good fats. My favorite is wheat toast or toasted wheat pitas cut into triangles.

Lentil Sloppy Joes
This is my adulterated version of the Lentil Sloppy Joes from Juli, my chef sister, when she worked for Cuisine magazine. Their version had homemade barbecue sauce. My inlaws gave us their food storage year supply, so I could probably eat this meal for free the rest of my life.

Bring to boil and then simmer for 20-30 minutes: 1 cup lentils, 2 cups water, dash of salt.
Stir in store-bought barbecue sauce.
I serve it on 100% Whole Wheat buns. You can put on slices of red onions and nice lettuce as well.

Bean Salad
I just throw in what I have. My favorite was a can of kidney beans, can of garbanzo beans, can of green dill beans (rinse and drain all the beans), can of olives, can of diced tomatoes, Italian dressing (you can make your own and omit the sugar, or not), pine nuts, fresh herbs if you have them. You can eat this plain or line pitas with lettuce and put them in there, or put it on top of a vegetable salad, or on top of brown rice.

Veggies
I confess I'm not much of a veggie cooker. Most of my veggies are raw: carrot sticks, peppers or green salad. I do broil asparagus with a bit of olive oil and salt, and I like a baked sweet potato. Here is my favorite salad that I make:

Pepper Salad
Red, Yellow and Orange sweet peppers in thin slices
Red onion in thin slices
Swiss cheese cut into strips
Tomato wedges
Marinate in Italian Dressing.
Addictive

Tabouleh Recipe I take from the Red Mill Bulgar package. Yummy although I find 1 teaspoon of Italian dressing to each serving adds a lot. Are you noticing a pattern?

Bean and Rice--Anyone got a great recipe? I had one I made in college and lost it. The others I've used since haven't been as good. That one had vinegar and oregano.

Snacks--I snack a lot on almonds and don't feel guilty a bit because I need the fat to be satisfied and I need the Calcium, now that I've almost eliminated dairy from my diet. I also do V8s, apples, carrots, and occasionally I force myself to drink a glass of water--I'm so bad at not drinking!

Thanks! I'll give some of those a try. By the way, bulghur makes an excellent pilaf - saute onions and garlic in some olive oil, stir in bulghur, add broth (I like beef) and simmer until done. (Depending on the bulghur, this might be really fast.) Season w/ salt and pepper. You can also add in diced veggies.

Thanks for posting these, Sarah. I'm so uncreative when it comes to cooking. I can follow a recipe, but I can't imagine combining ingredients on my own. I've decided to try your diet, and I had the same menu two days in a row: oatmeal for breakfast, whole wheat couscous for lunch (with peppers, chickpeas, and salsa). Pretty good, but boring. Someone (you?) said something about peanut butter on toast, so I had that today. It will be nice to add variety with your suggestions. Does seem to be working. I've lost two pounds since Monday.
